Does the Gravity Forms developer edition replace the standard Wordpress registration form? If so, does it do that automatically or do I need to hack the code and insert a code snippet?

What you would do is create a page and place the Gravity Form you created for Registering on that page, then there is a setting in the Add-On that is a checkbox, see this screenshot:

Once you do this, the WordPress register link will automatically redirect to the page you designated in the User Registration Add-On Settings.
