We have a form that accepts Chinese characters. The emails look okay and the back-end looks ok (in WP). But, when the form entries are exported, the Chinese characters are all gobbly-gook.
Is there a way to export these entries and preserve the characters?

I am not sure why it would be mangling the characters. When you import, are you using a content type that supports the Chinese characters? UTF doesn't support them, so you'll have to make sure you import it in Excel or whatever tool you are using to read it in a content type that works with the characters you are using.
